Serves 4 1 large onion (finely chopped), 3 cm ginger (finely chopped), 1 clove of garlic (pressed), 1 tsp curry powder, ½ tsp cinnamon, ½ tsp turmeric, ½ tsp cumin, ½ tsp coriander, salt and pepper 2 tsp De Hobbit vegetable stock (optional), 1 tsp red curry paste, 2 carrots (finely sliced), 1 courgette (chopped), 1 stick of celery (finely chopped), 400 ml coconut cream, 1 pack rice noodles 1 pack of De Hobbit lupin sausage (sliced)
In a deep pan cook the onion in oil until softened. After a few minutes add the ginger, garlic and spices. Stir for 1 minute. Add the other vegetables and coconut cream. Simmer on a low heat for 15 minutes. Meanwhile, prepare the rice noodles and in a little olive oil fry the sliced lupin sausage. Serving tip: Serve the curry with the rice noodles, the lupin sausage, slices of lemon and fresh coriander.
