vegan makes 4 toasties For the guacamole: 1 ripe avocado, juice of ½ lemon, salt and pepper, pinch of chilli powder, For the soured cream: 150 g cashew nuts, juice of ½ lemon, 2 tbsp yeast flakes (optional), salt and pepper, a few spring onions 1 pack of De Hobbit tofu sausages + 1 pot of De Hobbit sweet pepper and basil spread bread of your choice toasted
For the guacamole, mash the avocado and add the lemon and herbs. For the soured cream, place all the ingredients (omitting the spring onions) into a food processor and blend to a thick spreading consistency. Finely chop and add the spring onions. Grill the tofu sausages (or fry in a little olive oil). Spread the toast with the sweet pepper and basil, then top with guacamole, soured cream and tofu sausage.
