Tofu and beansprouts

Ingredients

- 250 g tofu, lightly spiced - 1 bunch of watercress - 1 bunch of purslane - 250 g mixed beansprouts (Alfalfa or Lucerne, leek sprouts, dandelion sprouts, garden cress, mustard cress, radish sprouts, shiso sprouts, etc.) - chives Dressing: - 150 ml olive oil - 1 tablespoon cider vinegar or lemon juice - 1 tablespoon honey - 1 clove of garlic, pressed - salt and pepper

Usage

Make the dressing by combining all the ingredients. Wash the watercress and purslane and mix in a bowl with the beansprouts. Spoon a little of the dressing over the top. Fry the tofu in a little olive oil until crisp. Add soy sauce to taste, if required. Serve on a bed of beansprouts. To finish, garnish with chives.
