Recipe for 4 1 to 2 packets of Oriental spiced tofu strips from 'De Hobbit', olive oil, 2 onions (finely sliced), pinch of salt, 1 clove of garlic (pressed), 2 red long paprikas (finely sliced), 1 small red pepper (finely sliced & seeds removed), 4 tbsp concentrated tomato puree, 4 tomatoes cut into segments, 1 can of coconut cream, 1 tbsp of garam masala, 1 tbsp of paprika powder, 1 tbsp of curcuma, 1 tbsp of coriander powder, cooked basmati rice for 4 people, fresh coriander, 1 lime in wedges.
Fry the
tofu strips in a deep pan with olive oil. Put them in a bowl and set aside.
In the same
pan, fry the onion with olive oil and a pinch of salt.
After a few
minutes, add the garlic and small red pepper and then all the herbs.
Mix well
and now add the tomatoes and tomato puree. (A little water may be added and,
for extra flavour, vegetable stock).
Put a lid
on the pan and lower the heat. Let it simmer for 10 minutes more.
Now add the
coconut cream, the tofu strips and the juice of 1 lime wedge and continue to
cook for a few minutes.
Serve with fresh coriander, lime wedge and rice.
